Southern fried chicken is very easy and there is nothing in the seasoning
but salt and  pepper.  However, the secret is that the cut-up chicken is
soaked in a salt water bath (1 tablespoon salt and 1 quart water) for
about 1/2 hour.  In two cups of flour add 1 teaspoon of black pepper and 1
teaspoon of salt.  Take the chicken out of the water and dip in the flour
mixture, dust off excess flour and place in a preheated (medium heat)
frying pan that has 2-3 cups of Crisco.  Cover and monitor chicken for
browness. When it is golden brown turn pieces and brown the other side.
 That's all you need to do.
