| Roasting Notes: 1. If you keep the roast under an aluminum foil tent....after it has been removed from the oven it will continue to cook for a short while. 2. Roast pork should be grayish NOT pink when done. 3. Let rest for 5 minutes, to allow any excess juices to seep out before slicing. |
