"Ling" cooking is a process which might be called "splash
frying".  In other words, the food is not actually immersed in the
oil during the frying; instead it is suspended above the oil, and
a ladle is to pour and splash the food with hot oil which is then
allowed to run down into the pan containing the oil.  A well
known dish cooked in this manner is "Yiu Ling Chi" (Splash
Fried Chicken).
