Spicy Cocktail Turnovers

2 oz cream cheese, softened
1 oz chipped beef, minced
1 jalapeño, pickled, seeded, minced
½  recipe buttermilk biscuit dough
egg wash made by beating 1 egg with 1 tsp water

1.  In a bowl cream together the cream cheese, chipped beef, and the jalapeño.

2.  Roll out the dough slightly less than 1/8-inch thick on a floured surface and
with a 3-inch round cutter dipped in flour cut out as many rounds as possible,
reserving the scraps, covered.

3.  Brush the edges of each round with some of the egg wash and put a ball of
the cream cheese ( about the size of a cherry ) in the center of each round.  Fold
the rounds in half over the filling, pinch the edges together firmly seal them,  and
crimp them decoratively with the tines of a fork.  Gather the reserved scraps,
re-roll the dough, and make more turnovers in the same manner.  The turnovers
may be prepared up to 1 week in advance and kept wrapped well and frozen.

4.  Transfer the turnovers to an un-greased baking sheet, brush them with the
remaining egg wash, and bake them in a preheated 425 degree F oven for 15 to
20 minutes, or until they are golden.
