Breaded Trout  ~ Green chile added to the dry mix gives a unique flavor to the
trout.

1 pound trout, filets
1/4 cup flour
1/4 cup cornmeal
1/2 tsp salt
1 green chile minced
2-3 tbsp oil
1 lemon, sliced into wedges

1.  Clean fish, remove gills.

2.  Make 3 cuts along both sides.

3.  Coat fish with a mixture flour and cornmeal, salt and pepper.

4.  Heat oil in skillet over medium heat; cook fish 5-6 minutes.

5.  Turn and cook 5-6 minutes until fish flakes.

6.  Serve with lemon wedges.
