Sun Dried Tomatoes ~ Although this may differ slightly in your area.  The
method shown here does produce a fine dried tomato.  


1.  Blanch tomatoes for 30 seconds. (do not over blanch)

2.  Peel tomatoes.

3.  Slice in half (lengthwise).

4.  Place on plastic screen and place in direct sunlight.  To keep insects away
cover with a fine mesh screen.

Notes.  Depending on temperatures, tomatoes will dry in about a day or 2.  If
there is a possibility of rain, move inside.

Tomatoes must be completely dry before storing them.  Store in plastic airtight
freezer bags, in the freezer.

Although I use Roma tomatoes, I have had success with other types as well.  
You may have to slice into thinner slices.
