Masa Harina ~ Masa Seca ~ For tamales
Tamales de Hoja Santa ~  Receta en Español
17.6 oz lard (Crisco)  ( 1 pound = 16 oz )
1 tbsp salt
2.2 lbs harina de maize ( pictured on the left )
1 tsp baking powder
1½ cups chicken broth or as necessary
½ package corn husks for tamales, soaked to soften
There are many brand names for the corn husks.
Del Relleno:
¼ onion grilled
2 cloves garlic, grilled
3 tomatoes, grilled
Jalapeños, chopped ( add as needed )
8.8 oz (a little over ½ lb) cooked and shredded  pork
1½ hojas santa ~ pictures upper left ~ purchased in Mexican stores
salt to taste

Preparar:
1,  Whip the lard until it's white and puffed up, add salt; add the flour little by little
(previously mixed with the baking powder),  add the chicken broth and mix until
obtaining a smooth and spongy paste.   Put a small ball of masa (dough) in a
glass of water, if it floats it's ready.

2.  Blend the onion, garlic, tomatoes and chile; bring to a boil and add the pork
and hoja santa leaves.  Stir until the mixture is reduced and somewhat dry, salt (
or season ) to taste.

3.  Place two spoonfuls of masa in a corn husk, spread evenly; put a little filling
and enclose.  Continue until all masa and filling are used.  In a large pot steam
for one hour or 20 minutes in a pressure cooker.
