Masa Harina ~ Masa Seca ~ For tamales
Tamales de Manzana ~ Apple Tamales ~ Receta en Español

10.5 oz butter
7 oz lard ~ I prefer Crisco for health reasons
7 oz sugar ~ 8 oz  = 1 cup
2.2 lbs Harina de Maiz (tamale flour)
1 tbsp baking powder
1½ cup water
½ package corn husks, soaked

The filling:

2 tbsp butterc
3 tbsp sugar
3 yellow apples, chopped and cored
½ cup raisins
½ cup pecan, chopped

Preparation:
1,  Whip the lard until it's white and puffed up, add sugar and the flour (previously
mixed with the baking powder) little by little.  Add the chicken broth and mix until
obtaining a smooth and spongy paste.   Put a small ball of masa (dough) in a
glass of water, if it floats it's ready.

2.  For the filling, heat the butter and sugar, stir until it forms a honey (syrup), add
the apples, cook a little longer, add the raisins and pecans.  Stir and taste for
seasonings.

3.  Place 2 tbsp of masa on the corn hush; spread evenly, in the center put 1 tbsp
of filling and enclose.   Steam for 1 hour or 20 minutes in a pressure cooker.
