Tamales Giso ~ Made with achote water, a very different tamale than that known
from Mexico.  Achote is annato seeds.

Group 1:
1/4 cup chopped bacon
1/4 cup chopped garlic
1 cup oil
Sauté group 1 and set aside.

Group 2: Red Portion
2 cups achote water
2 cups cornstarch
2 cups corn meal
Mix in a separate bowl and add to group 1 making into a thick paste, set aside.

Group 3: White Portion
1/4 cup bacon chopped
1/4 cup garlic, chopped (sauté and set aside)
2 cups Masa Harina de Maize (available in supermarkets) made by Quaker.
2 cups water or chicken broth

Mix group 3 into paste.  Cut aluminum foil into 7x7=inch squares.  Fill with
mixture (red and white portions side by side) folding the foil and steam in
bamboo steamer.

Anchote Water
Cover the achote seeds with boiling water.  Cover and let stand at least 8 hours.
Drain
before using.
