Stuffed Squid
Squid with Green Beans ~ Normally served with other Chinese dishes.

1 lb squid
½ lb
fresh green beans
2 tbsp salt

Sauce:
2 tbsp ginger juice ( see note below )
2 tbsp soy sauce
2 tbsp vinegar
1 tsp sugar
1 tbsp sesame oil

1.  Remove tentacles, clean squid.  Slit open squid and lay flat with the inside
facing up.  Holding the squid, carefully cut or score a trellis or criss-cross pattern
on the squid.   Do not cut through.  Season with sesame oil and salt.

2.  Cut the squid into bite size squares (about 1-inch).  Blanch in boiling water for
1 to 2 minutes; rinse in cold water.  Drain and season with salt and sesame oil.

3.  Add salt to cut green beans; mix well, allow to set 2-3 minutes.  Add green
beans to boiling water and blanch for 2 minutes.  Rinse in cold water, drain, then
cut into  1¼ to 1½-inch pieces.

4.  Mix all sauce ingredients together, set aside.

5.  Make sure squid and green beans are well drained.  Add to sauce mixture
and toss to coat the squid and green beans.

Note:  Ginger juice can be substituted for ground or powdered ginger.
1 tbsp ginger juice = 1 tbsp fresh grated ginger  
or 1 tbsp ginger juice = 1 tsp of
ground or powdered ginger.
All purpose or use light soy sauce
