Spinach Madeline ~  Making this tomorrow to take to a church dinner...Old
recipe, but may be new to someone. (I don't like spinach, so when I make it for
myself only, I substitute chopped broccoli.)

4 pkg  frozen, chopped spinach
4 tbsp butter
2 tbsp flour
½ cup chopped onion
½ cup evaporated milk
½ cup vegetable liquor (from spinach)
½ tsp black pepper
½ tsp garlic powder
½ tsp salt
6-oz roll Kraft Jalapeño cheese
1 tsp Worcestershire
dash of cayenne

1.  Cook spinach according to package directions. Drain and reserve 1/2 cup
liquid.

2.  Melt butter in saucepan over low heat.  Add flour, stirring until blended and
smooth, but not brown.  Add onion and cook until soft and not brown.  Add liquid
slowly, stirring constantly, to avoid lumps.  Cook until smooth and thick, and
continue stirring.

3.  Add seasonings and cheese, which has been cut into small pieces. Stir until
melted. Combine with cooked spinach.

This may be served immediately as is, or put into a baking dish and topped
with buttered bread crumbs.  Heat in 350 oven about 30 minutes, or till hot and
bubbly. This can be frozen before baking.
