Consommé with Crunchy Vegetables ~ A clear, light soup of enriched meat
stock, which can be served either hot or cold.  Raw, diced vegetables are
added at the last minute to retain their crispness and fresh flavor.

2 1/2 pounds stewing beef
3 carrots
2 turnips
1/2 pound potatoes
1 cup green beans
1/2 large celeriac
1 leek
Bouquet garni (parsley, thyme, bay leaf)
2 cups peas
2 egg whites
2 tbls soy sauce
2 sprigs parsley
salt & pepper

Note:  For presentation dice all vegetables & beef about the same size as the
peas.
