Sesame Seed Shrimp Toast  ~  A wonderful appetizer or snack, for
presentation serve over lettuce leaves.  Here's another snack with shrimp on  
toast.  
Shrimp on Toast

8 oz uncooked shrimp, peeled and de-veined
2 tbsp lard
1 egg white, lightly beaten
1 tsp green onion finely chopped
½ tsp ginger root finely chopped
1 tbsp dry sherry or rice wine
1 tsp cornstarch mixed with 1 tbsp water
4-5 oz white sesame seeds
6 large slices white bread
vegetable oil for deep frying
salt and ground pepper to taste

1.  Chop together the prawns with the lard to form a smooth paste.  In a bowl,
mix with all the other ingredients except the sesame and bread.

2.  Spread the sesame seeds evenly on a large plate or tray.  Remove the bread
crusts, then spread the shrimp mixture on one side of the bread (spread on a
little thick), then press, shrimp side down, on the sesame seeds.

3.  Heat the oil in a wok until medium hot, fry 2-3 slices of sesame bread at a
time, shrimp side down, for 2-3 minutes.  Remove and drain.  Cut each slice
into six or eight fingers.
