Tangy Spicy Shrimp  ~  

1/2 pound medium size shrimp, raw
1 cup scallions, finely chopped
1 clove garlic, minced
1-2 fresh green chile (serrano, jalapeño, barker, mira sol extra hot)
1 tsp fresh ginger, minced
1 tsp dry sherry
salt to taste
1/2 tsp white pepper (ground or powder)
1 tbls chile paste  (recipe below)
1 tbls hot oil (recipe below)

1. Shell and de-vein the shrimp.  Bring enough water to cover the shrimp
to a boil.  Add the shrimp and cook for 1 minute.  Drain, run under cold
running water.  Pat dry, refrigerate.

2.  Combine remaining ingredients and pour over shrimp.  Serve cold

Serves 6-8
