Salat con Camarones ~ Shrimp Salad - or use as a filling for Avocado ~

1 1/2 cups cooked shrimp, sliced in half lenghtwise
1/2 cup pototoes, cooked and diced
2 eggs, hard boiled, sliced
1/2 cup celery, chopped
1/4 cup green onion, chopped
1/2 cup mayonnaise - (Like it hot? skip the green chile or red powder
below - substitute mayonnaise for 1/4 cup
Habanero Mayonnaise )
1/2 cup crema  or sour cream  ( if using Habanero Mayonnaise increase
crema
to 3/4 cup )
1 green chile, roasted, chopped (substitute: 1 tsp red chile powder)
salt to taste
lettuce leaves
lemon wedges
avocado - optional

Combine all ingredients, except lettuce and lemon wedges, stir gently
until evenly
coated with mayonnaise (dressing).

Refrigerate at least 1 hour before serving.

When ready to serve, place shrimp mixture on lettuce leaves.  Serve with
lemon
wedges.

Or: Use as a filling for avocado - omit the lettuce - Cut avocado in half
lenghtwise,
remove seed - do not peel.

Serves 6
