Wonton Shrimp Rolls ~ This is a Thai dish.  It lends itself to party type
presentations.  Be careful because the guests will be cooking the rolls for
themselves.  Depending on the sauce, these can be very spicy !!

12 fresh medium shrimp (about 10-12 to the pound)
12 wonton skins
Group 1
3 tbsp Sambal Ulek  or Nam Prik Kiga
3 tbsp chopped onion
3 tbsp tomato, peeled, remove seeds then dice

1.  Clean and devein shrimp. Thread them lengthwise onto skewers.

2.  Add onion and tomato to nam prik kiga, onion and tomato.

3.  Place ½ tablespoon of
group 1 on a wonton skins, add one shrimp; follow
this by a second ½ tablespoon of group 1.

4.  Wrap wonton skins into small roll similar to egg rolls, pinch closed  (insure
they are closed and won't leak).

To serve
Place a fondue pot or electric fryer with hot cooking oil on a table.  Your guest will
then dip their Wonton Shrimp Rolls into the hot oil to cook.  Cook until wonton
skins is crispy.

Note:  Tell your guests to be careful, the rolls may cause the oil to pop.

Sambal Ulek ~ Homemade ~ This can be bought ready made at Asian Markets
½ pound red chiles, stems removed
½ tbsp salt
½ cup vinegar dissolved in 1/2 cup lukewarm water
1.  Steam the chiles for 10 minutes.  Place in a mortar and pound until smooth.  
Add dissolved vinegar. Cool.  Keep refrigerated in a tightly closed jar.
