ChileMasters Shrimp Melt  ~

3 ounces shrimp, de-veined, cut lengthwise into halves
1 green chile, roasted, finely chopped
2 tbsp green onion, finely chopped
1 clove garlic, mashed, finely chopped
1 tbsp mayonnaise  ( this link is to Habanero Mayonnaise recipe - Very Hot! )
2 tsp lemon juice
1 tsp dijon-style mustard    ( skip this if Habanero Mayo is used )
2 slices wheat bread - lightly toasted
4 thin tomato slices
2 slices Monterrey Jack cheese

Preheat broiler.  In a small mixing bowl combine all the ingredients except
bread, tomato slices, and cheese.  Mix well

Onto each slice of bread arrange 2 tomato slices and half the shrimp mixture,
then top with 1 slice of cheese.

On a nonstick baking sheet arrange sandwiches and broil 5 - 6 inches from
heat until cheese melts. (About 1 minute)
