India Style Shrimp ~  This shrimp dish from India is quite spicy (hot).  You should
be able to taste the shrimp, the spices should not over power the
dish.  I prefer this with Jasmine Rice or White Rice!

Group 1
2 dried red chiles, remove seeds if you prefer
3 fresh green chiles, minced
1 tsp ground turmeric
3 cloves garlic, crushed
½ tsp fresh ground black pepper
1 tsp paprika
2 tsp white wine vinegar
½ tsp salt

1 pound jumbo shrimp or prawns - peeled and deveined

3 tbsp vegetable oil
1 medium onion, minced
¾ cup water
2 tbsp lemon juice
2 tsp garam masala  (see below)
sprigs of fresh cilantro to garnish

1.  Combine Group 1 in a non metal bowl.  Stir in the shrimp and allow to
marinate for about 10 minutes.

2.  Heat a wok or large frying pan; add the oil, add the onions and stir fry for about
3-4 minutes or until soft.

3.  Add the shrimp and Group 1 turn heat to high and stir fry for 2 minutes.  
Reduce the heat; add the water allow to boil for about 10 minutes.  Stir
occasionally as you continue to cook.  Cook until most of the water is evaporated
and the curry is fragrant.

4.  Stir in the lemon juice and garam masala.  Transfer to a warm serving dish,
garnish with cilantro.

Serves 4-6

Note:  Many Asian and Chinese dishes tend to cool off quickly so I prefer to serve
on pre-warmed dishes or serving platter.
