
| Shrimp and Garlic ~ This Italian shrimp dish is nice for a light meal or starter. 4 garlic cloves 1 pound whole shrimp 9 tbsp butter ~ not margarine 4 tbsp olive oil 6 tbsp brandy or cognac salt & pepper to taste 2 tbsp chopped parsley Serve with lemon wedges ciabatta bread ~ an Italian bread 1. Peel and slice garlic 2. Wash and pat dry the shrimp 3. Melt the butter with the oil in a large frying pan. Add the shrimp and garlic; fry over high heat, stirring for 3-4 minutes until shrimp are pink or coral colored. 4. Sprinkle with brandy (remove from stove or it may flame up on you), season with salt & pepper. If you desire you can tilt the pan over the flame to light the brandy. Be careful! 5. Sprinkle with parsley serve at once. |
