Camarones Fritos a la Francesa
Found at many seaside towns in Mexico, this is the Mexican version of French
Fried Shrimp

2 pounds large shrimp
1 cup flour
1/4 tsp salt
2 whole eggs
3 tbsp melted butter
1 cup beer
2 egg whites, stiffly beaten
hot oil

1.  Shell and devein shrimp, rinse and pat dry.  Mix flour with salt.

2.  In a separate bowl beat eggs lightly with butter and stir in flour mixture. Add
beer slowly and stir only until batter is no longer lumpy. (Don't over stir.)  Let
batter ferment in a warm spot for 45 minutes, then carefully stir in egg whites.

3.  Dip shrimp in batter and fry in hot oil (enough to cover shrimp as they are
frying).  Drain on paper towels and serve with small bowls of mayonnaise and
Salsa Verde
