Shrimp, Fish & Rice ~ Not exactly a fried rice dish, but with much the same effect.

1½ rice - long grain, basmati, or jasmine
2 tbsp vegetable oil
1 onion peeled and chopped
1 clove garlic - crushed
1 tsp cumin seeds
½ - 1 tsp red chile powder
4 cloves
1 cinnamon stick
2 tsp curry paste
1 lb shrimp, peeled
1 lb white fish fillets (cod, talipia, haddock), cut into bite sized pieces
salt & pepper to taste
2½ cups boiling water
1/3 cup frozen peas
1/3 cup corn kernels
1-2 tbsp lime juice
2 tbsp coconut, shredded
cilantro springs and lime slices to garnish.

1.  Wash rice in several changes of cold water. Drain well.

2. Heat the oil in a saucepan, add the onion, garlic, spices, and currry paste, fry
gently for about 1 minute.

3. Stir in the rice and mix well in the spiced oil. Add the shrimp and fish, season
with salt & pepper.  Stir lightly, then pour in the boiling water.

4.  Cover and cook gently for 10 minutes, without uncovering the pan.  Add the
green peas and corn, cover, and continue cooking for another 8 minutes.  
Remove from heat and allow to stand for 10 minutes.

5.  Uncover the pan, fluuff up the rice with a fork, and transfer to a warm serving
platter.

Sprinkle the rice with lime juice, toasted coconut and serve with cilantro and lime
slices as a garnish.
