Delightful Shrimp Dip ~

1 pound raw shrimp
1 8 oz cream cheese, softened
¾ cup mayonnaise
½ cup finely chopped green onions
½ cup finely chopped celery
3 tbsp lemon juice
2 tbsp chopped fresh parsley
½ tsp salt
¼ tsp cayenne pepper

1.  Boil, peel, devein and chop shrimp.  In a bowl, blend cream cheese with
onions, celery, lemon juice, parsley, salt, cayenne and mayonnaise.  Fold in
shrimp.  Cover and refrigerate.

2.  Serve with buttery crackers or homemade Melba toast.

Note:  For a spread rather than a dip, eliminate the mayo.  You can substitute
crawfish for the shrimp.
