Putenschnitzel mit Mandelkruste ~  Turkey Breast with Almond Crust

Preparation time 15 Min. / Cooking time  10 Min.

4 - 5½ oz turkey breast
Salt
Pepper, freshly ground
1 cup flour
2 eggs - (allow 1 egg for 2 pieces of schnitzel)
1 cup bread crumbs
½ cup almonds, sliced  
butter or margarine for frying ~ you may use oil



1. Rinse turkey breast with running water, dry.

2.  Using a metal or wooden mallet pound the turkey breast until it is about 1/4 inch thick.

3.  Rub schnitzel with salt and pepper, set aside.

Note:  You will need 3 separate dishes or pans for the eggs, flour and bread crumbs.

4.  Beat the eggs in a bowl.  Place in a shallow dish or pan.

5.  Mix the bread crumbs with the almond slices.  Place in a separate shallow dish or pan.

6.  Add the flour to a shallow dish or pan.

7.  Coat the schnitzel with flour, then the beaten egg, followed by the bread crumbs.

8.  Cook at medium high heat in about ¼ to ½-inch oil in a frying pane (cast iron preferred) until
golden brown, then turn for the other side.  Turn only once.
 (If your oil is to hot, your schnitzel will
not be golden brown, but rather dark).

8.  Garnish with buttered vegetables and serve.
