Orange Sausage
The Frugal Gourmet. "Sausage with fresh
orange peel in it may sound strange, but you will
love this one. I like to make meatballs of this and then brown them and simmer them in a
light tomato sauce." Jeff Smith
1 clove garlic, crushed
grated peel from ½ orange
1½ tsp salt
1 tsp cinnamon
1 tsp allspice
1 tsp pepper
½ cup white wine
2 pounds coarse-ground beef
1 pounds coarse-ground pork
1. Mix all ingredients except the meats in a food blender. Then add the meat. Stuff into
casings, or fry plain.
Makes 3 pounds
