5 pounds pork butt, coarsely ground
1 clove garlic, finely minced
1½ tsp allspice, whole
1 medium onion
½ tsp black pepper, whole
1½ tsp mustard seeds, mash to a powder using a mortar and pestle
¼ cup salt
½ cup water.

1.  Mix thoroughly, and stuff into casings. Poach or boil for 20 minutes.
