Oyster Sauce ~ Homemade Oyster sauce

12 large oysters
½ cup chicken or meat stock
2 tbsp dry sherry
3 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sugar
2 tsp vegetable oil

1.  Shell the oysters; strain and reserve liquid in a cup.

2.  Heat the oysters, oyster water, stock, and sherry in a small sauce pan.  Simmer
very gently for 10 minutes.  Stir in the soy sauce, hoisin sauce, sugar, and oil and
continue cooking, stirring gently for 5 minutes.

3.  Cool, strain and store in the refrigerator.
