Monte Cristo Sandwich with Green Chile ~ A re-make of the classic Monte
Cristo Sandwich.  The addition of green chile will be a surprise to your guests.

1 large egg, beaten
¼ cup milk
1 tsp Parmesan cheese, grated
dash freshly ground pepper
1 ounce cooked ham, sliced
1 ounce Swiss cheese, sliced
green chile, roasted, stem removed and seeded, cut into strip lengthwise
2 slices white bread
1 tsp butter

1.  In a bowl combine egg, milk, Parmesan cheese, and pepper, set aside.  
Place ham, then green chile strip, then Swiss cheese on 1 slice of bread; top
with remaining slice of bread.

2.  Dip sandwich into egg mixture, turning several times until as much liquid as
possible is absorbed.

3.  In a small non-stick skillet heat butter until bubbly and hot; add sandwich,
pouring any remaining egg mixture over bread.  Cook over low heat, turning
once, until brown and crisp on both sides.

Serve immediately
