Heissen Kartoffel Salad mit Weisswein ~ Hot Potato Salad with White Wine

2½ pounds potatoes
salt and freshly ground pepper to taste

1/3 cup dry white wine
½ cup peanut, vegetable, or corn oil (olive oil if you prefer)

1.  Rinse the potatoes and put them in a large saucepan with cold water to
cover.  Bring to the boil and simmer until tender, 20 minutes or longer,
depending on size.  Do not cook until mushy.

2.  Pre-heat oven to 200 degrees.

3.  Drain the potatoes and when they are cool enough to handle, peel them.  

4.  Cut them into ¼-inch slices and put in a heatproof mixing bowl.  Sprinkle
with salt, pepper, wine and oil.  Toss while warm.

5.  Cover the bowl with foil and put in the oven briefly to warm through.  Turn
into a serving dish and serve while warm.

About 8 cups

To reduce this recipe by half, simply divide all ingredients in half.
