Low-Cal Dressings ~

Russian Dressing
1/3 cup water
2 eggs beaten
½ tsp salt
½ tsp paprika
½ tsp dry mustard
pinch of pepper
2 tbsp cider vinegar
3 tbsp chili sauce

1.  Combine all ingredients except the chili sauce in a medium-sized saucepan.  
Cook, stirring constantly, over very low heat until dressing thickens.  Remove
from heat; stir in chili sauce.

2.  Chill in covered container before using.

1 cup at 19 calories per tablespoon.

French Dressing

1 tbsp cornstarch
1 cup water
4 tbsp wine vinegar
2 tbsp olive or vegetable oil
1 clove garlic, minced
3/4 tsp salt
¼ tsp pepper
3/4 tsp paprika

Mix all the ingredients in a small saucepan.  Brink to boiling, stirring constantly,
over low heat.  Cook 5 minutes longer.  Cover; chill.

1 cup at 18 calories per tablespoon

Thousand Islands

1 egg
2 tbsp cider vinegar
4 tbsp skim milk
¼ tsp paprika
½ tsp salt
¼ tsp dry mustard
½ tsp chili powder
2 tbsp tomato paste
2 tbsp stuffed olives, chopped
2 tbsp dill pickle, chopped

1.  Combine all ingredients except olives and pickle in a blender.  Blend until well
mixed.  

2.  Transfer dressing to a small saucepan.  Cook, stirring constantly, over low
heat until dressing thickens.  Stir in olives and pickle.  Chill.

3/4 cup at 12 calories per tablespoon

Yogurt Dressing

1 cup plain yogurt
3 tbsp lemon juice
1 tsp salt
½ tsp prepared mustard

Combine all ingredients in a small bowl; stir until thoroughly mixed.  Chill before
using.

1¼ cups at 7 calories per tablespoon

Creamy Italian

1 cup part-skim ricotta cheese
1 envelope Italian salad dressing mix
½  cup skim milk

1.  Combine cheese, salad mix and  milk in a blender.  Blend on low speed,
scraping sides frequently with a rubber scrapper, until thoroughly mixed.

2.  Transfer to covered container; chill before using.

1 1/3 cups at 22 calories per tablespoon

Bleu Cheese Dressing

1 cup small curd dry cottage cheese (from an 8-oz carton)
1 envelope Blue Cheese salad dressing mix
½ cup skim milk

1.  Combine cheese, salad mix and  milk in a blender.  Blend on low speed,
scraping sides frequently with a rubber scrapper,  until thoroughly mixed.
2.  Transfer to covered container; chill before using.

1 1/3 cups at 20 calories per tablespoon

Lemon French Dressing
1 tsp unflavored gelatin
1 tbsp cold water
¼ cup boiling water
2 tbsp sugar
½ tsp salt
1 tsp grated lemon peel
½ cup lemon juice
1 tsp dry mustard
¼ tsp garlic salt
pinch of pepper
¼ tsp Worcestershire sauce

1.  Sprinkle gelatin over cold water in a small bowl to soften.  Add boiling water;
stir until gelatin is thoroughly dissolved.

2.  Add sugar and salt; stir until dissolved.

3.  Combine gelatin mixture with remaining ingredients in container.  Shake well;
serve at room temperature.

1 cup at 9 calories per tablespoon

California Citrus Dressing

½ cup orange juice
¼ cup lemon juice
1 tsp seasoned salt
½ tsp paprika
½ tsp garlic powder
1/8 tsp freshly ground black pepper

Combine juices, salt, paprika, garlic powder and pepper in a 1 cup jar screw top.  
Shake until thoroughly mixed.
