Cucumber Salad ~ an accompaniment for satay
2 small cucumbers, cut in quarters lengthwise, then slice into
¼-inch thick pieces
2 shallots peeled, sliced thin
1 red chile, cut into small strips (I use Thai Dragon...hot)
2 tbsp sugar
1 tsp salt
1 tsp vinegar
½ cup water

1.  Put cucumber, shallots and red chile in a small bowls, set
aside. In a small pot, mix
together sugar, salt, vinegar and water.  Cook over medium
heat until boiling, cool and pour over cucumber.
