Spanish Fried Rice

2 cups rice
1 clove garlic, minced
1 medium onion, quartered, then sliced thin
¼ cup oil.
1 small can tomato paste.
3 cups chicken stock or water
salt to taste

In a large frying pan, heat the oil,  after oil is heated add the rice.  Sauté rice until
just
browned, stir constantly careful to not let rice burn.  Add onion and garlic,
continue to
cook until onion turns somewhat transparent.  Add tomato paste (sauce),
followed
by water or chicken stock.

Cook the rice over moderate heat, uncovered, until most of the water has
evaporated.
Place the cover on the pan/pot, reduce heat to low for about 20 minutes.  Rice is
done
when you press down gently with a fork, and the rice tends to spring back up.
