Coconut Rice Fritters  ~ Philippines

2/3 cup cooked long-grain rice
2 tbsp coconut milk powder
3 tbsp sugar
2 egg yolks
juice of 1/2 lemon
3 oz coconut, desiccated
oil for deep frying
confectioners sugar for dusting
toothpicks to serve

1.  Place about 1/3 of the rice in a food processor or pound using a mortar and
pestle until smooth and sticky.   Transfer to a bowl and mix in the remaining rice,
coconut milk powder, eggs, sugar and lemon juice.

2.  Spread out the desiccated coconut on a cookie sheet.  Wet your hands, divide
the rice into small (about the size of your thumb) pieces, then roll them in the
coconut making small balls.

3.  Heat the oil (about 350...standard for deep frying) in a wok.  Fry the rice balls
3-4 at a time for 1-2 minutes until evenly browned.  Transfer to an attractive dish,
dust with confectioners sugar and place a toothpick into each one.
