Chile Relleno Cheese Stuffed Green Chile (classic method)

1 large egg, separated
dash salt
1 large poblano
¾ oz shredded Monterey Jack cheese (white goat cheese
called Manchego is more original)
oil for deep frying
½ cup flour

1.  In a medium bowl, with electric mixer on high speed, beat
egg white and salt until stiff.

2.  In a small bowl, lightly beat egg yolk; fold into egg whites.
Spread half the mixture in prepared dish.

3.  *Make a slit down the length of the chile, carefully remove
seed ball.

4.  Fill chile with cheese.

5.  Lightly coat with flour.  Dip chile into egg mixture,  Repeat
this one more time.

6   Deep fry in oil until golden brown.

* Poblano chile should be roasted and
peeled before starting this recipe.
