Meat Platter
Meat, Shrimp and Noodle Platter ~  A great "Ramen" dish.  This recipe has
suggested accompaniments for your entire meal.

Separate ingredients.
3 packages Ramen noodles - use flavor packet depending on meat used.
1 cup sliced meat; pork, beef or chicken
½ cup shelled, deveined shrimp, leave tails intact
2 black (Chinese) mushrooms ~ or Shiitake mushrooms (
2-3 leaves bok choy cabbage (also called nappa cabbage)
5 tbsp oil
* Group 1
½ tbsp soy sauce
1 tsp cornstarch
1 tsp sherry
* Group 2
10... ½-inch pieces of green onion
6 slices ginger root
* Group 3
1½ cups Superior Stock (or canned chicken broth)
1 tbsp sugar
½ tsp salt
dash of pepper
* Group 4
1 tbsp cornstarch mixed with 2 tbsp water

1.  Cook noodles (al dente) according to package directions. Drain well

2.  Put the cooked noodles in a serving dish.

3.  Add
group 1 to meat and marinate for 20 minutes.  Cut the cabbage leaves
and mushrooms into mahjong size pieces.

4.  Heat the wok then add 3 tbsp oil.  (it is important in Chinese cooking to heat
the wok first, then add the oil)  Stir-fry the meat until the color changes; remove.
Stir-fry the shrimp and remove.  Add 2 tablespoons of oil.  Stir-fry
group 2 until
fragrant.  Lightly stir-fry the mushrooms and cabbage; add
group 3 and bring to a
boil.  Add mixture
group 4 to thicken; stir.  Add the meat and shrimp; bring to a
boil and pour over the noodles.

5.  Serve immediately

Serves 4 - 6

Suggested Accompaniments
Lumpiang Sariwa = (Egg or Spring Rolls)

White Rice  or Five Color Rice

Egg Flower Soup - To start the meal ~ this will give you a little extra kitchen or
cooking time.

Carrot, Cucumber & White Radish Salad
*Group 1a
1 cup daikon (white Chinese radish), peeled, shredded
½ cup carrot, peeled, shredded
½ cup cucumber, seeds removed, peeled, shredded
note: (I prefer using a vegetable peeler to shred the vegetables.)
*Group 2a
1 tbsp white vinegar
1 tsp sugar
½ tsp sesame oil
*Group 3a
salt to taste

1.  Combine
group 1a add group 3a and let stand 1 hour.

2.  Lightly rinse the vegetables, drain.  Add
group 2a, mix and serve.
