
| Stir Fried Prawns with Broccoli ~ This colorful dish, is highly nutritious, and not difficult to prepare. 6-8 ounces prawns or large shrimp, shelled and deveined 1 tsp salt 1 tbsp Chinese Rice wine or dry sherry ½ egg white 1 tbsp cornstarch paste (see below) 8 oz broccoli 1¼ cups vegetable oil 2 green onions, cut into 1-inch lengths 1 tsp light brown sugar 2 tbsp stock or water 1 tsp light soy sauce few drops of sesame oil 1. Cut each prawn in half lengthwise. Mix with a pinch of salt and about 1 tsp of the rice wine (dry sherry), egg white and cornstarch paste. 2. Cut the broccoli heads into florets; remove the rough skin from the stalks, then slice the florets diagonally into diamond-shaped chunks. 3. Heat the oil in a pre-heated wok and stir-fry the prawns for about 30 seconds. Remove with a slotted spoon and drain thoroughly. 4. Pour off the excess oil, leaving 2 tbsp in the wok. Add the broccoli and onion, stir-fry for about 2 minutes, then add the remaining salt and the sugar, followed by the prawns and stock or water. Add the soy sauce and remaining rice wine or sherry. Blend well, then add sesame oil and serve. Serves 4 Cornstarch paste Mix small amount of water with cornstarch until a smooth paste is made. |
