
Cotton's Chicken Pot Pie ~ "Was waiting for someone (?) to post her recipe, but haven't seen it yet. I've never used a real recipe, but I'll try to put it as best I can. You can use either dark and white meat, or all of either. Whatever you prefer." Cotton 2 pie shells 4 cups cooked chicken - in bite-size pieces ½ stick butter or margarine 2 tbsp flour 1½ cups milk salt, pepper, dash of cayenne? 1 can cream of chicken soup, undiluted 1 can mixed veggies, drained 3 medium potatoes, cubed and cooked ** You can add more veggies if you'd like. Sometimes I add a small can of niblets corn and one of petit pois peas, along with the mixed veggies. Make cream sauce of butter, flour, and milk. Add cream of chicken soup, cooked chicken, rest of ingredients. Put into lightly sprayed baking dish (or two), top with pie shells, crimp edges, cut slit in top of crust, and bake at preheated 350 degrees for approx. 25 minutes. I usually make about this amount, and put into 4 med-small Corning baking dishes. They freeze really well. To cook after being frozen, just take out of freezer, pop into preheated 350 oven for about 45 minutes. Is good...I ga-ron-teeeee! |
