Roast Pork Loin I ~ On the Grill

3½ pound pork loin roast ( 8 ribs)
1½ tsp onion salt
½ tsp marjoram, crushed
¼ tsp pepper

1.  Rub roast with a mixture of the salt, marjoram, and pepper.  Secure roast to a
spit.  Insert meat thermometer.  Adjust spit about 8 inches above prepared coals,
placing aluminum foil pan under pork to catch drippings.  If using a gas fired grill,
adjust flame following manufacturer's directions.

2   Roast until meat thermometer registers 170o F. or until meat is tender.  About
30 minutes before roast is done, score surface.

3.  Place roast on a warm serving platter.  Garnish with parsley.

Note: To roast in the oven, place pork loin, fat side up, on a rack in a shallow
roasting pan.  Roast uncovered, at 325 F  for about 2½ hours.
