| Pork with Green Chile II ~ 3 lb pork 14 green chiles, roasted, seeded (about 1 ziplock bag) 3 cloves garlic, chopped 1 onion, medium, chopped 5 tomatillos, large, chopped 4 cups water (boiling) Oil for browning meat 1/2 cup flour 1. Cut pork into small cubes. Sauté in oil until well browned. Drain off all but 2 tablespoons fat. Add flour and sauté 3 minutes longer. 2. Puree chiles, garlic, onion, tomatillo 3. Add to pork, season to taste with salt. Cover and simmer 1 hour. Note: The green chile in this recipe will be somewhat green in color. Serves 8 |
