Snap Peas with Mint ~

1 lb snap peas (5 cups)
¼ cup butter
2 tbsp finely chopped mint
salt and pepper to taste


1.  Do not shell snap peas.

2.  Add water to a saucepan (enough to cover snap peas); bring to a boil.  Add the
snap peas and cook 4-5 minutes or until crisp-tender.  Drain immediately.

3.  Return the peas to the saucepan; add butter, mint and salt and pepper to taste.
 Toss until the peas are coated.

Serves 4
