Linguine with Shrimp  ~  Shrimp is high in protein a lends itself well to the al
dente linguine.  Buying canned and precooked can save on time.

2 cloves garlic, chopped
2 tbsp olive oil
1 medium onion, chopped
½ lb cooked Roma tomatoes chopped or 8 oz canned Roma tomatoes
1 tsp orégano, dried crushed leaf type ~ fresh use 2 tbsp
1 lb cooked shrimp
¾ cup fresh basil chopped
½ lb Feta cheese ~ (if you're watching calories use fat-free Feta)
½ lb linguine
salt & pepper to taste

1.  Boil salted water.  Cook linguine according to package directions or until al
dente.

2.  Over medium-high heat, sauté garlic and onions in olive oil for about 3-4
minutes.  Add cooked  shrimp; cook an additional 2 minutes.

3.  Remove shrimp from pan (try to leave as much of the onion & garlic as you
can).  Add cooked or canned Roma tomatoes to the pan; stir and bring to a boil
then reduce heat.  Add shrimp, orégano, basil and salt and pepper to taste.  
Allow to simmer for 4-5 minutes.

4.  Pour sauce over cooked linguine and toss.  Top with crumbled feta cheese.

Serves 6-8
