ChileMasters Homestyle Omelet

Group 1
4-5 slices of bacon, chopped
4 boiled potatoes, cubed
1 medium onion, chopped

4 eggs
4 tbsp milk
salt and pepper to taste
2 tomatoes, chopped
4-5 roasted green chile
2 ounces Queso Enchiloso, grated (substitute = Monterrey Jack)
1 tsp cilantro, chopped

1.  Brown the bacon, potatoes , and onion in a skillet.  Add roasted green chile.

2.  Beat the eggs with milk.  Add salt and pepper to taste then pour over
group 1.
Make sure eggs are evenly distributed in the skillet.

3.  Sprinkle roasted green chile, tomatoes and cheese on top.  Cook until
omelet is creamy on the surface.

4.  Serve with cilantro sprinkled on top.
