Spaetzle  ~  German Noodles

2 cups sifted flour
3 eggs
⅔ cup milk
salt to taste
⅛ tsp grated nutmeg
2 tbsp butter

1.  Place flour in a mixing bowl.  Beat the eggs and add them to the flour, stirring
with a wire whisk or an electric beater.  Gradually add the milk, beating or stirring
constantly.  Add the salt and nutmeg.

2.  Bring a large quantity of water to a boil in a kettle and add salt.  Pour the
spaetzle mixture into a colander while holding over the boiling water.  Press the
mixture through the holes of the colander with a rubber spatula or large spoon.  
Or use a spaetzle machine following the manufacturer's directions.  The spaetzle
are done when they float to the top.  Drain the noodles and spoon them onto a
clean towel or paper towels to dry briefly.

3.  Heat the butter in a skillet and when it is hot, add the spaetzle, tossing and
stirring 3-5 minutes.

Serve hot.
