
| Swedish Meatballs and Green Chile ~ This favorite meatball dish is enhanced with the addition of green chile. For the original, omit the green chile. 1 cup (3 slices) fine dry bread crumbs 1 lb ground round steak (or 90% lean hamburger) ½ lb ground pork ½ cup mashed potatoes 1 egg, beaten 1 tsp salt ½ tsp brown sugar ¼ tsp pepper ¼ tsp allspice ¼ tsp nutmeg 1/8 tsp cloves 1/8 tsp ginger 3 tbsp butter 3 green chiles ~ (optional) 1. Set out a large, heavy skillet having a tight-fitting cover. 2. Set out bread crumbs. 3. Lightly mix together in a large bowl ½ cup of the bread crumbs, steak, pork, potatoes, egg, green chile, and a mixture of salt, brown sugar, pepper, allspice, nutmeg, cloves, and ginger. 4. Shape mixture into balls 1-inch in diameter. Roll balls lightly in remaining crumbs. 5. Heat butter in the skillet over low heat. 6. Add the meatballs and brown on all sides. Shake pan frequently to brown evenly and to keep the balls round. Cover and cook 15 minutes, or until meatballs are thoroughly cooked. 7. Make a light brown sauce. Pour over meatballs; serve. About 3 dozen meatballs. |
