Machaca de Monterey ~ Shredded beef with eggs...a breakfast meal.

3 tomatoes, small, unpeeled, chopped
1 onion,small, chopped
3 fresh chile , serranos, or jalapenos, chopped
2 - 2½ cups shredded beef  (
Carne Deshebrada is great)
2 tsp. lime juice
6 eggs, lightly beaten
¼ - 1/3 cup oil
2 tbls shredded Cheddar cheese - optional

Mix tomato, chile, onion.  Over medium heat sauté vegetables in a heavy skillet,
until they become sauce like (about 6 - 8 minutes).  Add beef and lime juice, cook
for about 2 - 3 minutes more.  Add lightly beaten eggs, cook and stir until set.  
Sprinkle cheese over Machaca (optional)

Serve as filling in a warm flour tortilla.  Serve as main breakfast dish with Salsa
Cruda, refried beans, and tortillas on the side.  Garnish with lime slices cut in half.
