| Huevos Rancheros en Salsa Verde VII ~ Ranch Style Eggs in Green Salsa By: Cocina Mexicana: - Mexican Kitchen: http://mexico.udg.mx/cocina/ 6 eggs 6 small tortillas (corn tortillas) about 1/3 cup (substitute with vegetable oil) 2 chile serranos 12 green tomatoes (substitute with tomatillos) 1 small onion 1 clove garlic 1 sprig cilantro salt & pepper Procedure: Fry the tortillas in lard (vegetable oil). Cook eggs in lard - vegetable oil Prepare the salsa ahead of time, purée the cooked tomatillos,onions, garlic, chile and cilantro, season with salt & pepper. Place the tortillas on a warm plate and put an over easy or sunny-side up egg on the top of each. Smother in the prepared salsa.
