Huevos Motulenos
Huevos Rancheros IV  ~ Ranch Style Eggs ~ The Blom House Bed & Breakfast

Tortillas (corn)
eggs (large)
cheese (cheddar grated)
green onions, cilantro garnish if desired

Salsa
1 large can stewed tomatoes
1 bell pepper, slivered
1 brown onion slivered
2 tsp garlic powder
salt
½ cup Pace Picante sauce (mild)

1.  Microwave pepper & onion until soft.  Add tomatoes, garlic, picante sauce,
salt.

2.  Break eggs into skillet that has been sprayed with Pam. When whites
congeal, add 3 tablespoons hot water, sprinkle cheese over eggs, cover and
steam to desired doneness.

3.  Serve on 2 warm corn tortillas with warm salsa around the sides. Garnish
with chopped green onion and cilantro.
