Huevos Motulenos
Huevos Rancheros III  ~ Ranch Style Eggs ~ This Recipe brought to you

8 corn tortillas
8 large eggs
3 tbsp butter
Salsa
1 avocado
1 tomato
½ cup Monterrey Jack cheese, shredded
Sour Cream ~
crema

1. Peel and slice avocados, set aside.

2. Slice tomato and set aside.

3. Warm up corn tortillas on griddle so they become warm and soft and place
two, slightly overlapping on each plate.

4. Cook eggs, over easy, in butter, two at a time and place one on each corn
tortilla on plate.

5. Cover with salsa, sprinkle with cheese and garnish with tomato and avocado.

6. Serve sour cream on side.

Serve Huevos Rancheros with a mixed fruit combo of diced honeydew, whole
grapes, orange slices, and sliced mangos,  Mexican chocolate and juice.
