Glaze
Ham Glaze ~

Apple Cider Glaze
Group 1
¾ cup brown sugar
½ tsp dry mustard
2 tbsp maple syrup

¾ cup apple cider

Combine and mix group 1, spread glaze over ham.  Occasionally baste with
apple cider.

Apricot Glaze using jam
¾ cup apricot jam
¾ cup honey
2 tbsp lemon juice or cider vinegar

Combine and mix, spread glaze over ham.

Apricot Glaze using dried apricots
1½ cups apple cider
8 ounces dried apricots

Group 1
6 tbsp brown sugar
½ tsp ground cinnamon
½ tsp ground allspice
¼ tsp ground cloves

1.  In a bowl, pour apple cider over dried apricots.  Cover and refrigerate
overnight.

2.  Purée apricot mixture in an electric blender.  Stir in group 1

3.  Spread glaze generously over ham before heating.  Heat remaining sauce
and serve on the side.

Mustard Glaze
Group 1
1 cup brown sugar
1 tbsp flour
1 tsp dry mustard

2 tbsp cider vinegar

Mix
group 1, then stir in 2 tbsp cider vinegar.

Jelly or Jam Glaze
Dilute 1 cup quince or elderberry jelly, jam or orange marmalade with 1/3 cup
very hot water.

Brown Sugar Glaze
Heat together, stirring until sugar is dissolved, 1 cup packed brown sugar and ⅔
cup light corn syrup.  If desired, ⅔ cup spiced fruit juice or ginger ale may be
substituted for the corn syrup.
