Carne Guisada III  ~ There are many variations to this favorite dish. Carne
Guisada ..is a well known dish in many Latin American countries.

Carne Guisada - Meat stew (pork)

2 lb -3 lb pork
1/4 - 1/2 cup shortening/vegetable oil (lard to be more original)
1 onion, chopped
2 medium tomatoes, peeled and chopped
3/4 cup flour
2 cups water
Preparation
2 cloves garlic
salt to taste
1 tsp comino (cumin)

Cut pork into 1 inch cubes (in the case of pork steak - 1 x 1/2 inch rectangles).
Over high heat, brown the pork in oil.  After meat is browned, reduce heat, add
chopped onion and tomatoes, mix together with pork.  Add flour slowly, stir until
sauce thickens to a gravy.  Add 2 cups water - slowly as to retain the heat.
Simmer for about 30 - 45 minutes, or until meat is tender.

Serving suggestion:  Serve with tortillas, rice , refritos beans , salad.
