Banana Fritters ~ Banana Fritters
1¼ cup all purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
¾ cup water
4 firm bananas
3 cups oil
ice cream ~ vanilla

1.  Combine 1 cup of the flour, baking powder, soda, and salt in a large bowl.

2.  Gradually blend in water beating with a whisk until smooth.

3.  Peel bananas.  Cut each banana crosswise into 3 pieces, making a total of
12 pieces.  Using the remaining 1/4 cup of flour, roll banana pieces in the
flour until well coated.

4.  Heat oil (I use a wok) over medium-high heat until it reaches 375o F.  Dip
banana pieces in flour-water mixture, coating completely.  Cook 4 to 6
banana pieces at a time in the oil until golden, 2 to 4 minutes.  Drain on
absorbent paper.

Serve with ice cream.
